This is optional. If you're short on time you can skip this step and serve the crostinis untoasted.
Preheat your oven to 350°F and arrange the baguette slices on a baking sheet.
Brush both sides of each slice with olive oil and season lightly with salt.
Bake in the preheated oven for about 15 minutes, flipping halfway, until golden and crispy.
Remove from the oven and set aside to cool.
Assemble the Crostini:
Spread a generous amount of your choice of hummus on each crostini.
Top with a variety of the suggested toppings: avocado, purple cabbage, sprouts, baked squash or sweet potato, corn, cherry tomatoes, and black olives. Feel free to mix and match to your heart's content!
Sprinkle with black sesame seeds and a little smoked paprika for extra flavor, if desired.
Serve:
Arrange the vegan crostini on a serving platter and enjoy immediately.
