This delicious plant-based green goddess dressing is the perfect thick creamy dressing to serve on salad, over quinoa or other grains, over roasted vegetables, on sandwiches and in wraps, and beyond. This versatile dressing is loaded with nutrients, super creamy from the soaked cashews, and it has the most incredible flavor. Level up any vegetarian or vegan dish with this gorgeously green sauce!
Advance Prep: Soak the raw cashews in water for at least two hours, and then drain and discard the water. If you forgot this step, you can boil them in water for 15 minutes instead.
In a high-powered blender, add the soaked cashews, juice of the lemon, garlic cloves, tahini, parsley, dill, olive oil, salt, and ⅓ cup of water, and blend on high until smooth and creamy. If needed, add additional water a tablespoon at a time to achieve the desired dressing consistency.
Dressing Consistency: This recipe makes quite a thick dressing. To thin the dressing, simply add more water. This can be done while blending, or afterwards. This dressing will also thicken in the refrigerator, but you can thin it with water when you're ready to use it! Storage: Store this green goddess dressing in a sealed container with a lid, such as a glass mason jar. It should stay fresh for around 3-4 days.
