½cupvegan chocolate chipsfor decorating
Instructions
In a large sauce pan over low heat, add vegan butter and marshmallows.
Stir regularly for about 7–8 minutes, or until largely melted.
Add cereal to the sauce pan and stir until well combined.
Press mixture into a 9x9 pan until it's about 1-inch thick but no thinner or they will be too thin to pipe the faces on. Set aside to cool before cutting into 12 mice-size rectangles.
Meanwhile, make the mice ears. Using a piece of paper, sketch mice ears, place it on a cutting board, and cover with wax paper.
Heat chocolate chips (using microwave of double boiler) until melted.
Pour melted chocolate into a plastic bag, cut a tiny hole in the tip, and pipe the chocolate onto the wax paper to form your mice ears. Set in the freezer for 20 minutes until chocolate hardens.
While freezing, pipe the chocolate onto the rice krispies to form the mice eyes, nose, whiskers, and tails. Then pipe chocolate onto the "head" to attach the frozen ears. Work quickly when attaching the ears to prevent them from melting.
Allow to cool before enjoying or serving at a Halloween party!

Notes
Quick Zap Tip: Short on time? Zap the butter and marshmallows in the microwave instead of the stove. Just use a glass bowl and stir every 30 seconds until everything’s perfectly gooey, then mix in your cereal.
Leftover Lowdown: Mice krispies are best enjoyed fresh, but if you’ve got leftovers, they can play hide and seek in an airtight container for up to three days or chill in the freezer for as long as six weeks. Squeeze out all the air to keep them crisp!
Chill Out: If your chocolate decorations are feeling the heat, pop the finished Krispies into the fridge for a few minutes. It’ll set the chocolate faster and stop those cute little ears from drooping.
Dress Them Up: Hosting a themed party? Customize your mice with different colored chocolate or edible glitter for that extra wow factor at your spooky soiree!
